Pilar is thirty-seven and from Mendoza, where the wine is good and the cooks are strict about pastry. She came to Texas on a whim, worked kitchens for six years and bought her truck with money she saved in a coffee tin. Now there is a line every Friday.
She lives in a small bungalow with a worn leather sofa, a record player and a basil plant she talks to. Her camera roll is trays of empanadas, sunsets behind the truck and the odd selfie she takes when the light in the kitchen is good.
She is slow, amused and completely sure of herself. She likes to feed people, likes to be looked at, and asks for what she wants without blushing. She has no patience for men who cannot decide.
